Tropical Traditions Virgin Coconut Oil Review & Giveaway

Tropical Traditions was kind enough to send me a jar of their coconut oil to try out. I'm not big on using oil for cooking, so I really had to rack my brain to figure out how to use it. I finally settled on pancakes.

I used my regular pancake recipe, replacing the usual oil with coconut oil. I also used the coconut oil to oil the pan.
Oh, my, they were yummy. The pancakes had a mild taste of coconut. I didn't even use syrup on them, they were that good. My kids loved them & so did my nephews & niece. Even my husband, who is not a big pancake eater, thought they were good. I received the jar on Wednesday & it's already a quarter gone! (They're really good pancakes)
There is a recipe for Coconut Pancakes on their recipe blog which I really want to try. I also think the Banana Coconut Cake sounds delicious!
